Abstract

Since we do not currently understand all the changes that accompany the various stages of transition from normal colonic epithelium to colon cancer, it is impossible to talk with great certainty about how dietary fiber protects against colon cancer. Nevertheless, enough is currently known in this complicated process to discuss potential mechanisms by which dietary fiber may operate. This chapter will first examine the effects of dietary fiber within the lumen of the bowel and then concentrate on the tissue effects that might occur as a result of exposure to high fiber diets or specific metabolites of dietary fiber.
