Abstract

The behaviour of zinc in biological systems is affected by a wide range of nutritional and physiological factors. Interactions with dietary constituents which influence the absorption of zinc have been described in preceding chapters. However the systemic metabolism of zinc can also be affected by interactions with other metals or with organic metal-binding species.
