Abstract
Vitamin D is the general term covering several related sterols which are present in various animal species. That present naturally in the human is vitamin D3—cholecalciferol (Figure 15a), but ergocalciferol (vitamin D2—Figure 15b) is often used therapeutically. This group of sterols is soluble in most organic solvents, but only poorly soluble in vegetable oils.
