Abstract
Interactions of lecithin dissolved in alkane with polar solvents and phosphatidylethanolamine have been studied by means of IR and 31P NMR spectroscopy. Comparison of gelforming compounds with sructurally related ones incapable of inducing jellification of lecithin solutions has provided an insight into the molecular organization of polymerlike micelles. In a developed molecular model, the polar solvents bridge neighboring phospholipid molecules through a ribbon-like hydrogen bonding network consisting of alternate solvent molecules and lecithin phosphate groups.
