ADH Activity, via Ethanol, Affects Ethylene Production in Tomato Pericarp Discs

Abstract

Exposure of tomato fruits to ethanol vapors delays the ripening by inhibiting the ACC oxidase activity via a sugge sted modification of membrane microstructure. Alcohol dehydrogenase (ADH) activity increases several folds in green tissue exposed to hypoxia; in contrast, the increase is small under ethanol treatment. ADH activity has been postulated being affected by ethylene in yeast but Morrell and Greenway (1989) have shown no relation exists between ethylene and ADH in rice coleoptiles. Because in ripening fruit, ethanol, acetaldehyde and ethylene increase and ADH activity rises in ripening tomato fruits (Longhurst et al. 1990), we have studied if a relation exists,in tomato fruit pericarp discs treated with ethanol vapor, between ethylene and ADH.
