Abstract

The Cornell Restaurant Administration Simulation Exercise or CRASE course is an interactive computer game, which allows a number of restaurant management teams to compete in a simulated marketplace over an extended time period. The game collapses a two year trading period of eight quarters into a period as short as half a day per quarter. The simulation requires four to five days of real time for a short course presentation or eight half day workshops spread over a semester for full time students. The concept has been developed by Professor Bob Chase of Cornell University. The computer programme and manual are franchised by Professor Chase to colleges and universities throughout the world. This paper is a report on the operationalisation of the game with undergraduate hospitality management students at the University of Ulster in Northern Ireland.
