Abstract

Compared to other natural products such as alkaloids, proteins, steroids, terpenes, vitamins, etc., triglycerides and related phospholipids are simple compounds—just esters of glycerol with fatty acids, or fatty acids and phosphoric acids. Yet the determination of their structure and stereochemistry has not been so easy.
