Abstract
Although oats is not a major part of the human diet in most of the world, oat proteins have nevertheless been studied extensively. One impetus has been the importance of oats as an animal feed, particularly for horses. For this reason, breeding programs have long been aimed at increasing the protein percentage of oats (Moser and Frey, 1994). Second, the protein in oat seeds has a better balance of the amino acids essential in the human diet than that in most other cereals, including maize and wheat and other more important cereal crops (Lockhart and Hurt, 1986).
