Abstract
Potato forms a major item of the diet of a large proportion of a global population. Being highly efficient, potato is claimed to be superior to every other food crop in the amount of food produced per unit area in unit time (Weerasinghe, 1983). Its production ranks fourth among the major food crops, the other three being wheat, rice and maize in the order of importance. The ratio of protein to carbohydrate is far greater in potatoes than in many cereals and in other root and tuber crops. The quality of potato protein is excellent. Potato is best suited to cool, temperate regions or to high elevations (2000 m) in the tropics.
