Abstract
Two methods for determination of heavy metals in food products and biological samples were used: atomic absorption spectrometry (AAS) and anodic stripping voltammetry (ASV). The ASV method, due to concentrating metal in the mercury film, makes it possible to determine very low concentrations. For Pb and Cd determination by both methods the analysed samples were mineralised in a microwave oven with use of nitric acid. Determination of mercury in the food products was carried out using the mercury specific atomic absorption analyser (AMA 254) after thermal mineralisation and preconcentration on the gold layer.
Heavy metals were analysed in the vegetables from the vicinity of busy roads (Pb, Cd), human milk (Pb, Cd, Cu), food products, such as flour, fish, sausage, milk, cheese, cream, cakes from a market place (Hg), human hair (Hg) and blood and urine of steel industry workers (Pb). The correlation between the exposure to hazardous metals and their concentration in the analysed samples was established.
