GC-MS Analysis of Volatile Compounds of Mesir

Abstract

Gas chromatography — mass spectrometry (GC-MS quadrupole, EI) with multiple ion detection analysis was performed in order to obtain information on the volatile compounds prepared from Mesir, an unknown special blend of forty-one spices. Analysis by gas chromatography coupled with mass spectrometry led to the identification (mass spectra and retention characteristics) of the various volatile substances which have not yet been reported in Mesir.
