Abstract

Food yams are economically important staple foods in tropical and subtropical regions of the world. They belong to the genus Dioscorea, family Dioscoreaceae and order Dioscoreales. More than 600 species are known, with the most important cultivated edible yams being D. alata, D. rotundata, D. cayenensis, D. dumetorum, D. esculenta and D. bulbifera. The highest levels of yam production world-wide is attributed to white yam, D. rotundata, while D. alata, the greater Asiatic or water yam, is considered to be the most widely distributed species of this crop (Onwueme, 1978).
