Odor of (R)-Ethyl Citronellyl Oxalate and Its Conformations

Abstract

It is quite difficult to classify odor qualities, one reason being that many odorants have a complex odor, i.e., a few odor facets. Why does a single odorant have a complex odor? In 1971, Beets had already pointed out that odorants possessing conformational freedom have several odor facets [1]. It is probable that a few stable conformers of a single odorant fit different odor proteins and cause complex odor. Experimental evidence concerning odorant-receptor interaction has not yet been shown by X-ray or nuclear magnetic resonance (NMR), however. In this work, we tried to analyze and study stable conformers of (R)-ethyl citronellyl oxalate (ECO), the same odorant noted by Beets in 1971. ECO was synthesized and its odor quality was evaluated as “mainly musk-like odor with partially fresh and sweet rose-like odor” at the laboraories of the Takasago International Corporation (Hiratsuka, Japan).
