Zusammenfassung
Schüttelt man einige Tropfen Klauenöl im Reagensglas mit Wasser, so zerteilt sich das Öl in winzige Tröpfchen und wird vollkommen gleichmäßig im Wasser dispergiert. Läßt man aber das Gemisch ruhig stehen, so vereinigen sich die Tröpfchen wieder und bilden eine klare Ölschicht, die auf dem Wasser schwimmt. Fügt man nun einige Tropfen einer starken Seifenlösung zu dem Gemisch und schüttelt dann, so teilt sich das Öl wieder in dünne Tröpfchen auf, die sich aber beim Stehenlassen des Gemisches nicht so leicht wieder zusammenballen wie bei Abwesenheit von Seife. Hat man die richtige Menge Öl und Seife getroffen, so kann die Dispersion von Öl in Wasser viele Tage oder sogar unbegrenzte Zeit haltbar sein. Eine solche Dispersion von Öl in Wasser wird als Emulsion bezeichnet. Der Ausdruck Emulsion wird für jede Dispersion einer Flüssigkeit in einer anderen gebraucht.
