Zusammenfassung

Der Begriff »Umesterung« wird bei Fetten für verschiedenartige Reaktionen angewandt. Er kann sich sowohl auf den Austausch der Säuren als auch auf Änderungen im alkoholischen Rest von Estern beziehen. In vorliegender Arbeit wird der intra- und intermolekulare Austausch der Fettsäure-Reste im gleichen Glycerid-Molekül bzw. innerhalb mehrerer Glycerid-Moleküle behandelt.
