Zusammenfassung
Die Auswahl pflanzlicher und tierischer Rohstoffe für die Ernährung erfolgt nicht nur nach ihrem Gehalt an Nährstoffen (Kohlenhydrate, Fette, Proteine) und ihrem Genusswert, sondern natürlich auch unter dem Aspekt ihrer gesundheitlichen Unbedenklichkeit; Lebensmittelsicherheit, engl. food safety. Während z. B. Steinpilze als wohlschmeckendes Lebensmittel gelten, würde niemand den hochgiftigen grünen Knollenblätterpilz, der die toxischen Amantine und das Phalloidin enthält, zu den Lebensmitteln zählen. Dennoch enthalten viele Lebensmittel gewisse Giftstoffe, die sie selber gebildet oder aufgenommen haben, so dass spezielle Aufbereitungsverfahren und Dosierungen erforderlich werden, um Gesundheitsschäden zu vermeiden. Aber auch Kontaminationen durch Mikroorganismen können in Lebensmitteln zu Toxinbildungen führen.
