Zusammenfassung
Die menschliche Nahrung besteht zum größten Teil aus Kohlenhydraten, Fetten, Proteinen und Nucleinsäuren. Diese können im allgemeinen in der angebotenen Form vom Organismus nicht aufgenommen werden, da es sich um hochmolekulare Biopolymere oder nicht bzw. nur schwer wasserlösliche Verbindungen handelt. Die Aufgabe der Verdauungsprozesse im Magen-Darm-Trakt besteht darin, die Nahrungsstoffe zu einer für die Resorption im Duodenum und Jejunum geeigneten Form abzubauen. Dies geschieht durch hydrolytische Spaltung der Biopolymere in ihre monomeren Bausteine. Sie erfolgt durch die in den verschiedenen Verdauungssäften des Magen-Darm-Traktes enthaltenen Enzyme, deren Wirkung durch Milieubedingungen wie die Salzsäurekonzentration des Magens oder die Gallensäuren des Dünndarms verstärkt wird.
