Zusammenfassung

Bezogen auf ihre Verbrennungsenthalpie (S. 264, 587) bestehen bei den heutigen Ernährungsgewohnheiten etwa 50% der menschlichen Nahrung aus Kohlenhydraten. Diese dienen zu einem großen Teil der Energiegewinnung. Daneben sind sie Ausgangsstoffe für die Biosynthese der Polysaccharide, die im Glykogen, in Proteoglykanen und Glykoproteinen enthalten sind und wichtige Funktionen erfüllen. Kohlenhydrate liefern das Kohlenstoffskelet vieler Aminosäuren. Bei übermäßiger Nahrungszufuhr können schließlich Kohlenhydrate in großem Umfang in Triacylglycerine umgewandelt werden. Die damit verbundene Adipositas begünstigt sogenannte Wohlstandserkrankungen wie Arteriosklerose, Diabetes mellitus usw.
