Zusammenfassung
Unter dem Sammelbegriff Kohlenhydrate faßt man Naturstoffe zusammen, welche ihrem chemischen Aufbau nach primäre Oxidationsprodukte mehrwertiger Alkohole (Poly-hydroxyaldehyde und Polyhydroxyketone) darstellen; auch strukturell ähnlich gebaute Stoffe, insbesondere solche, deren Carbonyl reduziert oder oxydiert ist, sowie substituierte Derivate, werden in die Stoffgruppe mit einbezogen.
