Zusammenfassung
Die zweifache Rolle der Fette im Lebensgeschehen — Betriebs- und Reservestoff — wurde für die höheren Pflanzen besonders von J. H. Priestley (1924) klar herausgearbeitet. E. F. Terroine (1930) hat ähnhche Gedankengänge einer Übersicht über den tierischen Fettstoffwechsel zugrunde gelegt. Priestleys Forderung, nicht nur den Reservestoffwechsel der Pflanzenfette, sondern auch ihren Betriebsstoffwechsel zu untersuchen, ist bis heute kaum irgendwie erfüllt worden. Der Betriebsstoffwechsel geht ja in jeder Zelle der Pflanzen vor sich; jede Grenzschicht enthält Fett- oder Fettsäuremoleküle, die wahrscheinlich wesentlich an den Permeabilitätserscheinungen beteiligt sind, die vielleicht bei Stoffleitungen eine Rolle spielen, die bei den Umsetzungen anderer Stoffe beteiligt sein können und die wahrscheinlich selbst einem dauernden Ab- und Aufbau unterworfen sind (vgl. z. B. E. Rhodes und R. M. Woodman 1925, R. C. Jordan und A. C. Chibnall 1933). Von diesen Betriebsfetten funktionell wohl weitgehend verschieden sind die Reservefette, die wir als Betriebsstoff- und Energiespeicher in den Pflanzen vorfinden und die als Nahrungsmittel und als Industrierohstoffe eine so bedeutende Rolle spielen. Ob es tatsächlich gerechtfertigt ist, diese beiden Fettkategorien als voneinander anders als in ihren Funktionen verschieden anzunehmen, kann mindestens als fraglich hingestellt werden.
