Abstract
The significance of the term hydration depends on whether the quantity factor (water content), or the intensity factor (water activity) is involved. The former is usually expressed as a percent of the fresh weight, or sometimes of the dry weight. Another measure of the quantity factor is saturation deficit (Levitt 1951). This gives a value for the water content relative to that in the saturated state, which is taken as 100. Water activity, on the other hand, is usually obtained from one of the colligative properties of the cell solution—i.e. its vapor pressure, osmotic pressure, or freezing point lowering. The first of these is measured indirectly, by determining the relative humidity in equilibrium with the cell. By analogy with temperature, Walter (1931) has coined the term “hydrature” for the intensity factor. He expresses it quantitatively in atmospheres of osmotic pressure or in percent of relative humidity. It is essential to realize, however, that water activity is inversely related to osmotic pressure, directly related to relative humidity.
