Lecithin, welches im Eidotter vorkommt, ist ein wechselndes Gemenge von alkohollöslichen ungesättigten Phosphatiden, die in einer Reihe von Organen, insbesondere aber in den Geweben des Nervensystems vorhanden sind und anscheinend physiologisch eine große Rolle bei der Tätigkeit dieser Organe spielen.
