Zusammenfassung
Die Erforschung pflanzlicher Inhaltsstoffe, die Isolierung bestimmter Stoffgruppen und Einzelkomponenten, um sie als Zusatzstoffe (Food Additives) in der Lebensmittelherstellung einzusetzen, hat in den letzten 10 Jahren einen besonderen Auftrieb erhalten. Erst kürzlich wurde in den USA aus einem bestimmten Gewürz eine Komponente isoliert, die sowohl antioxidative als auch fungicide Eigenschaften besitzt. Der Gewürzinhaltsstoff ist geschmacklos und besitzt eine gute Wasserlöslichkeit (1). Auch über antioxidativ wirkende Komponenten, die in der Schale der Citrusfrüchte, besonders bei Orangen, enthalten sind, wurde berichtet (2).
