Oxidative Metabolism of Unsaturated Fatty Acids and Free Radical Formation

Our interest in the metabolism of C22 fatty acids, both mono- and polyunsaturated, started around 1970. In that year Abdellatif and Vies [1] published their study showing that feeding great amounts of rapeseed oil containing the monounsaturated erucic acid (C22:1) to rats caused acute lipidosis of the heart. Later a Canadian group showed that hydrogenated fish oil to some degree had the same effect [2]. The fat infiltration proved to be temporary. If the feeding of these fats is continued the fat infiltration disappears again. Evidently, an adaptation to these diets takes place.
