Zusammenfassung
Wie schon in einem früheren Kapitel erwähnt, läßt sich für die fettlöslichen Vitamine kein einheitlicher Wirkungsmechanismus aufzeigen. Vitamin D kann als Hormonvorstufe angesehen werden. Vitamin A wirkt teils hormon-, teils coenzymähnlich. Vitamin K kann als Cofaktor bei enzymatischen Carboxylierungsreaktionen angesehen werden, und bei Vitamin E kennt man außer seinen antioxidativen Eigenschaften keinen detaillierten Wirkungsmechanismus. Aus diesem Grund läßt sich für die fettlöslichen Vitamine keine einheitliche Gliederung aufstellen wie bei den B-Vitaminen. Insbesondere sind Stoffwechsel, Transport und Wirkung so eng verzahnt, daß sie sich kaum trennen lassen.
