Abstract
Carotenoids are a class of hydrocarbons (carotenes) and their oxygenated derivatives (xanthophylls) (for nomenclature see IUPAC Commission in Biochemical Nomenclature 1971, 1972, 1975) with a basic carbon skeleton consisting of eight isoprenoid units. They constitute one of the most important groups of naturally occurring pigments (ISLE R 1971, GOODWIN 1976, 1979, SPURGEON and PORTER 1980). Important functions include their action as accessory pigments in photosynthesis and as protective pigments (WHITTINGHAM 1976, KRINSKY 1979).
