Summary

The freeze-fracture technique shows that protein distribution in the plane of a membrane can be temperature-dependent. Above the lipid transition the distribution is random in bacterial membranes or reconstitued systems. Below the transition, lateral separations often occur, but the behavior varies with the protein species and the lipid composition. Despite exclusion from solid lipid, protein molecules exert a rigidifying effect on the fluid phase above the transition, while below the transition a disordering in the vicinity of the protein is indicated.
