Abstract

Carotenoids are fat-soluble unsaponifiable pigments widely distributed in plant tissues; they are characterized by the fact that they are composed of isoprene residues (usually 8; i. e. C40 carotenoids) so arranged that in the middle of the molecule the two lateral methyl groups are in the relative positions 1, 6, whilst in all other cases the relative positions are 1, 5, thus.
