Zusammenfassung
Die Vitamine, obwohl sie sehr unterschiedliche chemische Strukturen besitzen, werden auf Grund ihrer Bedeutung als unentbehrliche Nahrungsbestandteile und ihrer Wirkstoffunktionen im Stoffwechsel in einer Stoffgruppe zusammengefaßt. Ihr Bedarf ist im Vergleich zu anderen Nahrungsbestandteilen sehr gering. Für den Menschen ist die obere Grenze etwa 100 mg pro Tag (Vitamin C). Von den Spurenelementen, die auch in geringer Menge benötigt werden, unterscheiden sich die Vitamine dadurch, daß es sich um organische Verbindungen handelt.
