Zusammenfassung
Der Mineralstoff Calcium ist in Milch und Milchprodukten in bedeutenden Mengen vorhanden. Zusätzlich enthalten Fisch und Getreideerzeugnisse, einige Blattgemüse wie Grünkohl und Kopfsalat sowie Nüsse dieses Mengenelement. Aus Lebensmitteln pflanzlicher Herkunft ist die Bioverfügbarkeit des Calciums im Allgemeinen geringer als aus Lebensmitteln tierischer Herkunft. Dies ist vor allem auf die Komplexierung des Calciums durch Phytate (bei Cerealien, Leguminosen, Ölsaaten) bzw. Oxalate (bei Spinat, Mangold, Rhabarber) zurückzuführen.
