Abstract

Codes of ethics are documents that set out ethical principles of values or virtues related to the personal and professional behavior, to the social context and responsibility toward society.

In the food sector, these codes have been issued by some private nonprofit organizations and associations acting at a national and international level as well as by public bodies/entities related to the regulated profession of food technologist. In this chapter, the main features of the codes of ethics will be presented along with a critical review of the documents currently available.
