Abstract

Increasing interest in green and sustainable solutions in industrial and food formulation derives the force behind the rising number of studies from probiotic microorganisms. Biosurfactants obtained from probiotic lactic acid bacteria could be used as future cosmetics base, food additives, and therapeutics molecules. Further advancement in structural and metabolic engineering accumulates information about the structural properties of biosurfactants and this information could be useful to develop tailor-made biosurfactants for future applications such as green capping of nanoparticles. The future of biosurfactant application to human health would be an area of interest for various research groups around the globe.
