Abstract

The effects of reducing atmospheric pressure within the storage environment of fruit and vegetables have been the subject of considerable research and some patents. However, there are challenges in its application that have hindered its uptake commercially. This chapter examines these and puts them in the context of its historical development and application. It examines the technology used and describes and compares both beneficial and detrimental effects in its application.
