Abstract
Inflammatory bowel disease, comprised of Crohn’s disease and ulcerative colitis, is a result of complex interaction of genetics, environment and dietary factors that we are only now starting to understand. This chapter will focus on the different factors in the environment that may contribute to the cause of both CD and UC. Additionally it will discuss the different dietary contributions that may lead to inflammatory bowel disease as well as the role of diet in managing these diseases.
