Abstract

This chapter elaborates the role of phytochemicals and nutraceuticals extracted from the plants in relation to human health. First part of the chapter deals with the classification and significances of various important phytochemicals, their major sources, and health benefits. It is followed by the description of essential macro and micronutrients predominantly derived from the plants. Role of various essential and toxic metals in human health is also elaborated in the next section. Importance of the nutraceuticals particularly in relation to the free radicals has also been discussed in detail. Major sources and mode of actions of common reactive oxygen species are explained, followed by the major types of antioxidants (both enzymatic and non-enzymatic); their occurrence and protective effects for human health are also discussed. Various pro-oxidant processes are also mentioned. Last part of the chapter deals with the major contaminants in the vegetables, their main sources, and probable effects on human health.
