Neben den eigentlichen Nährstoffen, welche dem Körper die Kalorien ver- schaffen und ihm den Aufbau seiner Körpersubstanz ermöglichen, steht als gleichwichtiger Faktor für den Baustoffwechsel und den Betriebsstoffwechsel des tierischen Körpers das Wasser da. Der Menge nach steht das Wasser in jeder lebenden Zelle von allen Substanzen an erster Stelle. Die niedersten Tiere: Protozoen, Coelenteraten, sind die wasserreichsten.
