Zusammenfassung

Chitin kommt in einer Vielzahl von Organismen in aquatischen Ökosystemen vor. Es ist ein Polymer des Acetylglucosamin-Monomers. In seiner deacetylierten Form als Chitosan hat es breitere kommerzielle Anwendungen. Der Extraktionsprozess erfordert eine Hochtemperaturbehandlung unter alkalischen sowie sauren Bedingungen, abhängig von der Quelle. Chitin ist eines der am meisten erforschten aquatischen Biopolymere mit bestehenden kommerziellen Anwendungen sowie einer breiten Palette von Anwendungen in der Forschung. Dieses Kapitel behandelt Extraktionsprozesse aus verschiedenen Quellen, die Chemie, konventionelle und aufkommende Anwendungen, die Verfügbarkeit von aquatischen Futtermitteln für die Chitinproduktion sowie die Umwelt- und Wirtschaftsauswirkungen von Chitin.
