Zusammenfassung
Kollagen wird aus den Knochen, Häuten und Schuppen von Wassertieren gewonnen. Es besteht aus drei miteinander verknüpften Polypeptidketten, die eine tertiäre Struktur bilden. Es spielt eine strukturelle Rolle im Gewebe, wo es Flexibilität innerhalb der Gewebematrix hervorruft. Kollagen kann in verschiedene Formen verarbeitet werden und findet Anwendung in hochwertigen Produkten wie z. B. Gerüsten in der Gewebezüchtung. Kollagen aus Wassertieren dient als Alternative zu Kollagen aus Schweinen oder Rindern und beseitigt damit gesundheitliche Risiken oder ethische Bedenken, die mit dem aus diesen Landtieren gewonnenen Kollagen verbunden sind. Da Kollagen aus Teilen von Wassertieren gewonnen werden kann, die normalerweise nicht als Nahrung konsumiert werden, trägt die Produktion von Kollagen zur Abfallverwaltung sowie zur optimalen Nutzung von Wasserressourcen bei.
