Abstract

Annealing treatment is a typical physical modification method of starches, which alters the structure and physicochemical properties of starches without breaking down the starch granules. Annealing treatments were carried out at a particular temperature and a specific moisture level for a certain time period. There has been a lot of research on the annealing treatment of starches with varied botanical sources and treating conditions. In this chapter, the mechanism, methodology and the change in structure and physicochemical characteristics of starches after annealing treatment are reviewed and discussed.
