Abstract

The world faces many challenges to keep pace with progress in this era. Enzymes are the mainstay in various application fields conducive to this progress. Enzymes are proteins that catalyze different reactions converting substrates to new products. While animals, plants and microbes produce them, fungi are characterized by their higher potency of enzymes production. Other important features of fungal enzymes are the more stability and more retaining of their activity, which allows their application. This chapter emphasizes on the many studies that are directed towards increasing fungal enzymes production with lower costs by developing the processes of fermentation, and improving the recombinant DNA and enzymes engineering technologies. Further insights into the most important applications in different disciplines are given. Applications of fungal enzymes can satisfy the industrial needs, the medicinal demands, and the environmental requests. For instance, among the current applications of fungal enzymes is the fuel industries as ethanol production and fungal microbial fuel cells, and in paper, leather and detergents manufacturing. They can be utilized in food industries as cheese and bread making, in beverages as wine and juices, and flavoring. Moreover, they are used in the biomedical field for their antiviral, antibacterial, antifungal and antitumor activities, and in treatment of neurological disorders. Furthermore, in the environmental field, they are used to degrade keratinaceous wastes, organic pollutants as diesel oil hydrocarbons, herbicides, insecticides, naphthalene and anthracene, decolorize dyes and detoxify ink.
