Abstract

In today’s world, many people are facing several health problems. Cancer is one of the very common diseases that occur in human beings. Many researchers and scientists are continuously working to find out a cure for this disease. The use of cruciferous vegetables like sprouting broccoli, Brussels sprouts, knol-khol, kale, Chinese cabbage, garden cress, upland cress, and sea kale in our diet may be the best solution for protection from cancer disease because of the presence of indole-3 carbinol. Broccoli is one of the very important cruciferous vegetables that contain sulforaphane which is very effective against cancer. But the production of underutilized cruciferous vegetables like broccoli, Brussels sprouts, knol-khol, Chinese cabbage, and kale is limited due to the unavailability of high-yielding varieties/hybrids, insect-pest, and disease problems. In this chapter, underutilized cruciferous vegetables’ importance, nutritional importance, botany and taxonomy, varieties, agronomic practices, and plant protection are discussed.
