Abstract

Phosphorus is a critical nutrient in the diet. The ability to measure phosphorus in foods is a key component of studies examining the potential benefits and harm from dietary phosphorus in the food supply. This chapter will review the most common methodologies used to measure phosphorus in foods, including the advantages and pitfalls of each technique. Developing accurate methods for measuring phosphorus in foods is critical to research efforts aimed at assessing the physiological importance of phosphorus in the diet.
