Abstract
Given the diversity of the many metabolic pathways which may be modulated by unsaturated fatty acids, it is not surprising that dietary modification involving polyunsaturated fatty acids (PUFA) has been the subject of a number of studies in people with diabetes. More work has been done on animal models of diabetes (Storlein, 1992), but this will not be covered here.
