Abstract

There is a wide range of fermented goods which come within the scope of a work on flour confectionery, generally classed as bun goods. With this class of goods are buns of all kinds, fruit breads, brioches, Danish pastries, babas and savarins. For all such articles a high-class flour is required in order that a bold bun may be obtained.
