The control of quality in the manufacture of flavourings

It is hoped in this chapter to cover some of the many ways of ensuring that quality manufacture of flavourings is defined, thus ensuring that quality, commitment and good manufacturing practices are not only carried out but seen to be carried out. The current thrust of regulation, in its broadest sense, including legislation, customer audits, profits, batch traceability, supplier audits, etc. is written evidence. Flavourings are ‘food’, as defined, for example, by the 1990 United Kingdom (UK) Food Safety Act, and require the same standards of control.
