Evaluating Risks and Establishing Food Safety Objectives

Although food products should be enjoyable and healthy, they sometimes cause illness. Consequently, societies charge institutions or organizations with defining the level of protection that should be achieved to ensure the health and safety of the public. In the case of food safety, this responsibility usually resides with food control authorities given this mandate by national or local legislation. Companies are responsible for ensuring the safety of their products. Government and industry* function as risk managers and share the common goal of ensuring that consumers can enjoy safe and wholesome foods.
