The Emergence of a Concept

A deficiency of dietary fiber was one of the first recognized characteristics of diets of more affluent populations in contrast to poorer ones. Consequently, the progressive understanding of this component of food has been closely tied to the emergence of the concept of Western disease. It is therefore appropriate to sketch the rise of dietary fiber from being viewed as a food contaminant to its honored role in nutrition today, analogous to the rise of Cinderella from kitchen maid to princess.
