The concept of a Mediterranean diet was first developed by Professor Ancel Keys in his book How to Eat Well and Stay Well, The Mediterranean Way (Keys and Keys 1975). The book is basically a cookbook, full of recipes from different areas of the Mediterranean coast; but each recipe is complemented, on a scientific basis, by a quantitative description of its principal nutrients. Moreover, some long introductory chapters clearly describe the scientific background that led to the concept of a Mediterranean diet. In addition, the entire work focuses on cardiovascular diseases and mainly on atherosclerotic coronary heart disease (CHD).
