Utilization of Purified Cellulose in Fiber Studies

Purified cellulose preparations are used extensively in nutrition research. This is at least partially due to the acceptance of cellulose-type fiber as an established and recommended fiber to be used in purified diets (1). The common use of cellulose in studies analyzing the effect of dietary fiber on specific physiological parameters is illustrated by noting that the majority of such studies presented at this symposium utilized cellulose as one of the experimental fibers. Although purified cellulose products are used extensively in nutritional research they are seldom characterized in terms of composition or structural properties. The lack of attention directed towards the properties of the celluloses used in various studies could promote the false assumption that all commercially available cellulose fiber products are equivalent. In this regard, the main objectives of this paper are to point out some of the potential differences between commercially available cellulose preparations, to demonstrate approaches which may be used to characterize the properties of a purified cellulose preparation, and to discuss the relevance of using purified cellulose preparations in dietary fiber studies.
