Chapter 1 described how phospholipases are assayed. In this chapter, the description of individual phospholipases begins with those found in the simplest organisms, the bacterial phospholipases. In this and subsequent chapters, emphasis is placed on the isolation and structures of these enzymes and how they interact with substrate and metal ion cofactors. When known, the function(s) of the phospholipase is covered.
